Wedding Cakes

Wedding season is coming up again. Brides, bouquets and big beautiful cakes. Wedding cakes are the one baked good that manages to encompass love, commitment, and sweet blessings for the future.

The final project for my advanced wedding cakes class. We were instructed to design and execute a three tier, fondant covered wedding cake with embroidery piping, flowers, and a handmade topper. Mine featured an eyelet lace "skirt", custom designed piping, fondant roses, and royal icing butterfly.

A friend asked me to make her wedding cake. She wanted a square cake, fondant, small white dots, and ribbons in the wedding colors. The original design had bows at the front of each tier but at the last moment she decided to opt out of them for a simpler look. The cake flavors were devil's food with chocolate mousse and white cake with pastry cream and strawberries.

I was recently honored to create a cake for a couple's fiftieth wedding anniversary. They wanted the look of a wedding cake with turquoise and gold-yellow roses and the number 50 on top. It was wonderful to help this couple, their children, and their grandchildren celebrate fifty years of love, commitment, and family. This is what I wish for every couple who's wedding cake I get to make.
